Warm Up Your Winter Nights with Creamy Courgette (Zucchini) Soup Recipe 🍵

These bad boys are a breeze to grow and maintain, plus they're loaded with antioxidants and low in fat. Talk about a healthy summer squash! And let's not forget how versatile they are in the kitchen. You can spiralize them into "zoodles," fry them up as fritters, or even bake them into delicious bread. But today, we're all about courgette soup - the perfect dish to cozy up with as summer fades into autumn. So go ahead and pluck those courgettes from August to October, and let's get this soup party started!


Time: 20 minutes | Serves: 4


INGREDIENTS

1 tablespoon olive oil

1 onion (roughly chopped)

1 bunch of parsley (roughly chopped)

4 cloves of garlic (crushed)

4 Courgettes (Zucchini) (roughly chopped)

1L vegetable stock (or chicken stock if you prefer) – use only 750ml of stock if you prefer a thicker soup

120ml cream

2 pinches of salt & pepper

2 tbsp corn starch (as a soup thickener if needed)


HOW TO MAKE IT

1. Get a large pan and heat up some oil, then throw in the onions and garlic. Sauté those babies until they're nice and soft.

2. Add the courgette (or zucchini, if you're fancy) and give it a light sauté for about a minute.

3. Dissolve your stock cube in 750ml of hot water to make the broth and pour in the stock and let it simmer for about 10 minutes, or until everything is nice and dandy.

4. Time to add the parsley and cream for some extra oomph. Get ready to purée this baby!

5. Use a hand blender to purée the courgette mixture until it's smooth as silk. If you want to thicken it up a bit, blend in some corn starch.

6. Season with salt and pepper to taste.


~ Now it's time to serve this bad boy up with some crusty bread or toasted soldiers (which are just thin strips of toast, FYI) and a splash of cream. Get ready to cozy up and say goodbye to summer in the most delicious way possible!
