Time: 40 minutes | Servings: 4 INGREDIENTS 1 tablespoon olive oil

4 cloves of garlic (crushed) 1 onion (finely chopped)

12 brown mushrooms (sliced)

1 bunch of spring onions (roughly chopped) 400g Arborio risotto rice 150ml White Wine 1 mushroom stock cube (mixed with 1.5L of boiled water to make the stock) 120ml thick cream 1 bunch of flat-leaf parsley (finely chopped)

1 teaspoon chili flakes 1 teaspoon salt

1 teaspoon pepper 1 cup grated Parmesan cheese


HOW TO MAKE IT

1. Heat up some oil in a large pan and sauté that onion until it's as soft as a cloud.

2. Then, add in the garlic and cook it up for a minute - yum!

3. Time to toss in those spring onions and mushrooms and cook them up nice and soft.

4. Next, stir in the rice and white wine and let it simmer away for a minute.

5. Dissolve the stock cube in 1.5L of hot water to make the broth and pour half of it in and let it all bubble and simmer for 10 minutes, adding more broth until all the broth is used up - but don't forget to stir!

6. Add in the salt, pepper, chili flakes, and parsley, and let it all simmer for another 10 to 15 minutes until the stock is almost absorbed and the risotto is creamy.

7. Finally, stir in that cream and half of that grated Parmesan - it's a cheesy dream!


~ Sprinkle on the rest of the Parmesan and serve it up hot - this creamy mushroom risotto is a winner!"
