INGREDIENTS

220g Fusilli pasta (dried or fresh pasta) - use another pasta type if you can't find Fusilli

200g smoked salmon (thinly sliced)

2 spring onions (roughly chopped, the green stems only)

½ bunch of fresh flat-leafed parsley (finely chopped)

1 handful of chives (finely chopped)

100ml thick cream

1 tablespoon capers

1 tablespoon lemon juice (or squeezed juice from 1 fresh lemon)

1 teaspoon pepper

Some grated Parmesan cheese for serving


HOW TO MAKE IT

1. Take a large pan and bring water to a boil. Cook the Fusilli pasta as per the instructions on the pack. It's a Fusilli jacuzzi!

2. Once the pasta is cooked and "al dente", drain it and place it in a large bowl.

3. Now, for the pièce de résistance, in that large bowl, mix in the cream, smoked salmon, spring onions, parsley, pepper, capers, lemon juice, and chives.
