Time: 35 minutes | Serves: 4
⠀
INGREDIENTS
2 tablespoons olive oil
1 onion (finely chopped)
2 garlic of cloves (crushed or finely chopped)
Ginger (thumb size finely chopped)
1 tablespoon cumin
Coriander (small bunch finely chopped)
1 tablespoon curry powder (2 tablespoons if you like a stronger curry taste!)
Curry leaves (small handful)
450g fish (chopped bitesize)
400g tinned crushed tomatoes
500g mixed vegetables (fresh or frozen)
6 medium size potatoes (peeled and diced)
400ml water
1 chili (finely chopped) - optional
1 cup basmati rice
TIP: Use boneless fish fillets - we used Parrotfish fillets; a very tasty fish that stays chunky when cooked.
HOW TO MAKE IT
Alright, my dears, here's the top tip from my dear old mum: to make each ingredient really sing, give 'em each a minute of fame in the pan before bringing on the next. It's like the X-Factor for spices, but nobody's getting voted off here!
The Curry:
1. Start by introducing onions to a bit of oil in a pan on medium heat. It's a blind date, so give 'em a minute to get acquainted. Then, crash the party with garlic and ginger. Another minute, please, no paparazzi!
2. Now, it's time for cumin and curry powder to join the mix. One more minute on the clock. It's like a "speed dating" for spices!
3. Time to invite the fish. Give it a solid 5-minute mingle, just enough to tell a few good jokes but stir well!
4. Roll out the red carpet for the veggies. Let them party for about 5 minutes, but don't forget to stir. No wallflowers at this shindig!
5. Pop in the crushed tomatoes next. One minute, make it count!
6. Finally, it's time to heat things up. Invite chili and curry leaves, add the potatoes and a splash of water - 400ml, to be precise.
7. Give it all a good stir and let it simmer for about 25 minutes on medium heat. Remember to pop by occasionally for a stir. Now, onto the rice!
The Rice:
1. Treat your cup of rice to a nice bath to wash off the surface starch. It's like a spa day for grains!
2. In a microwave-safe bowl, introduce your rice to 2 cups of water. No need for small talk here.
3. Whack it in the microwave for 22 minutes at 600 watts. It'll come out steamier than a sauna!
When is the curry ready?
· When your rice is done, so is your curry! It's like they've got their watches synchronized!
· Also, a little family secret: test your potatoes with a fork against the pot. If it crushes like a dream, your curry is good to go!
· If you're after a thicker sauce, just crush a few more potatoes. It's all in the wrist!
~ Finally, garnish with a sprinkle of coriander, because we're classy like that!
Bon appétit bébé!
