Lea’s Lebanese Loubieh bi Zeit (Green Beans in Olive Oil)

Time: 30 mins | Serves: 4-6

INGREDIENTS

1 kilo green beans trimmed on both ends

5 large tomatoes (diced)

1 large onion (finely chopped)

1 teaspoon crushed garlic

2 tablespoons olive oil

1 tablespoon concentrated tomato paste




HOW TO MAKE IT

1. Gently fry those onions in a tablespoon of olive oil, but don't let them get too saucy!

2. Add the garlic and keep that cooking on low heat until it's crushed to perfection.

3. When the onions start looking like they need a holiday in the sun, toss in those green beans, cover them up, and let them simmer to greatness.
