Vegan Platinum Jubilee Meat-Free Chicken 👑

It's a bittersweet moment as we honor Queen Elizabeth II's Platinum Jubilee in 2022, marking her remarkable 70-year reign as Queen of the United Kingdom and the Commonwealth of Nations since 6th February 1952. It's with heavy hearts that we mourn the recent loss of this great monarch in September 2022, but we celebrate her legacy by creating a Platinum Jubilee fusion dish that reflects her regal colors and honors her service. Our fresh and colorful ingredients come together to create a vegan Coronation Chicken 2.0 recipe that's fit for a queen. And now, inspired by the 70 years of her majesty's reign, we present this special recipe that will live on forever as a tribute to a remarkable monarch.


Time: 20 minutes | Serves: 8 - 10

INGREDIENTS

1 tablespoon olive oil

360g meat-free vegan chicken fillets (roughly chopped strips) (we used "Yolo Filets")

1 shot glass of white wine

4 tablespoons vegan mayonnaise

1 heaped tablespoon curry powder

750g vegan yogurt (we used plain soy dairy-free yogurt)

3 green apples (peeled, cores and seeds removed, and chopped into bite-size pieces)

100g fresh pomegranate seeds

1 bunch flat-leaf parsley (roughly chopped)

1 tablespoon balsamic vinegar syrup

1 teaspoon brown sugar

1 teaspoon paprika

1 teaspoon salt

1 teaspoon pepper


HOW TO MAKE IT

1. Heat up your pan to medium-high and give your meat-free chicken fillets a quick sizzle in some delicious olive oil until they're golden brown and looking scrumptious.

2. Add a splash of white wine and give it a good stir. Let it all cook for about 2 minutes before setting it aside to cool down. Patience is a virtue, my friend!

3. In a mixing bowl, combine some vegan mayonnaise and dairy-free yogurt with some spices that'll make your taste buds dance - curry powder, balsamic vinegar, paprika, salt, and pepper, bravo, you now have your Platinum Jubilee dressing!

4. Chop up some green apples, toss in some pomegranate seeds, flat-leaf parsley, and a sprinkle of brown sugar. Mix it all together with your Platinum Jubilee dressing.

5. Add your cooked meat-free fillet to the mix and give it a good stir. Let those flavors mingle and get to know each other!


~ Serve this regal dish on a bed of mixed lettuce or some cold-cooked rice mixed with herbs for a truly royal experience. And let's raise a toast to Queen Elizabeth II, whom we will always remember deep in our hearts as she reigned for 70 incredible years!
